Tatemado Oceanfront Woodfire Dinner Vol. 1 >> The Clay Fish <<


The passionate chef of open fire cookery, Roberto Madero, is bringing back his curated kitchen skills to our tables — he’s taking over the beach restaurant with a culinary journey using artisanal ingredients, smoke and flames to provide an experience you won’t forget. 

The process will make use of aromatic herbs, leaves and clay to swaddle a fresh fish and steam it using nothing but a smoky wood fire. Once complete, the result is a succulent, light and flavorful mouthful. Perfect when paired with a crisp white wine and ocean views over the sunset hours.

The event will be divided across two days. The first day is focused on watching, learning, and eating, and the second day gives you the chance to cook your own clay fish dinner at the beachfront. Tickets are priced per day.

Starting from 4 pm on Saturday, live music will accompany Roberto by the flames whilst he explains his wood-fire cooking concept and its traditional origins. He will then demonstrate the preparation of a freshly caught fish, stuffing it with seasonal, local ingredients before encasing it in fresh leaves and clay and placing it on the open fire to be cooked to perfection. The fish will then be served with his equally enticing signature side dishes, all of which guests will learn how to create themselves. 

On Sunday, we’ll hand it over to you! Beginning at 4 pm, attendees will use what they learned from the previous day to prepare their own fish with side dishes, cooked using wood, smoke, and fire.

Once the cooking is completed, dinner will be served! Enjoy your own creations at the beachfront restaurant, and for those who wish to add something extra, we’re offering a wine pairing add-on: specifically selected wines to compliment the flavors of the fish and smoky wood-fired sides. 

It doesn’t end when the workshop is over either: the RoOf sunset bar is open afterwards, should you wish to continue the night beneath the stars. 

Tickets for the full 2-day experience cost $150 USD per person, with a wine pairing add-on optional.

If you only want to attend one of the days, you can do so for $75 USD per person by attending Live Cooking Saturday (watching only) or Cooking Workshop Sunday (hands-on, making your own).
