Our newest regular: FINO

Visiting us here at the hotel on two Mondays per month, FINO is a project created by artisanal experts of hospitality: Gonzalo Cerrato and Simone Mellone. A highly talented executive chef from Madrid, Gonzalo hand picked his most loved flavors of the Mediterranean in order to create the FINO menu. A series of small plates, each dish is packed with flavor and color, served beautifully in tapas-style servings.

Of course, no meal is complete without something to drink. Creative mixologist, Simone, took his Italian origins and poured them (literally) into his aperitivo drinks menu. Designed to bring out the flavors of Gonzalo’s tapas plates, the pair made quite the team in putting smiles on the faces of their customers at the Hotel.

Our first of the series was no practice run. Totally immersed in the project, Gonzalo and Simone put hours of time into each element of their presence and it showed! The dining room was filled with beaming faces, each enjoying the mood and food with live music and friends from Tulum.

We’re so excited to have the boys on board with us here at Distrito and look forward to what is next to come!
